Preparation
- Start by washing and dicing the potatoes into small, even pieces for uniform cooking.
- Chop the onion finely so it blends well with the other ingredients.
Cooking
- In your crockpot, add the diced potatoes, chopped onion, and pour in the chicken broth. Stir the mixture gently.
- Add a sprinkle of salt and pepper, adjusting to your preference.
- Cover the crockpot with the lid and set it on low heat. Let it cook for about 6-8 hours or until the potatoes are tender.
- Once the cooking time is up, use a potato masher to break down some of the potatoes to achieve a creamy consistency.
- Pour in the milk and add the shredded cheese, stirring well. Let it cook for another 30 minutes.
- Give it a final taste and adjust the seasoning if necessary. Ladle the soup into bowls and add your favorite toppings before serving.
Notes
Store leftovers in an airtight container for up to 4-5 days in the fridge. This soup freezes well; allow it to cool completely before freezing. Reheat gently over low heat on the stove or in the microwave.
