Ingredients

Main Ingredients
  • 1.5 pounds flank steak, sliced into thin strips Cut against the grain for tenderness.
  • 1 large green bell pepper, sliced
  • 1 large red bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
Sauce Ingredients
  • 1 cup beef broth
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 1 tablespoon cornstarch Optional, for thickening.
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon crushed red pepper flakes Optional for spice.

Method

Preparation
  1. Start by slicing your flank steak into thin strips.
  2. In your slow cooker, layer the sliced beef, bell peppers, and onions.
  3. Sprinkle the minced garlic over the top.
  4. In a separate bowl, whisk together the beef broth, soy sauce, brown sugar, black pepper, and salt. If you like a thicker sauce, mix in the cornstarch last.
  5. Pour the savory sauce mixture over the beef and vegetables in the slow cooker, ensuring everything is well coated.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender.
  7. If you like your sauce thicker, transfer the contents back to a saucepan, mix with more cornstarch, and cook until desired consistency is reached.
  8. Serve hot over rice and enjoy!

Notes

To create a balanced meal, serve with fluffy white or brown rice, and consider pairing with steamed broccoli or a simple side salad.
