  • 1 cup Chicken broth Keeps the chicken moist and adds depth.
  • 2 tablespoons Honey A hint of sweetness to balance the flavors.
  • 2 tablespoons Olive oil To drizzle and add richness.

Preparation
  1. Start by seasoning your chicken pieces with salt and pepper.
  2. In a bowl, combine the juice and zest of the fresh lemons, minced garlic, chicken broth, honey, and olive oil. Whisk until well mixed.
  3. Place the seasoned chicken in your crockpot and pour the lemon sauce over the top.
Cooking
  1. Cover your crockpot and set it to cook on low for about 6 hours or high for 3 to 4 hours.
  2. Check the chicken’s internal temperature to ensure it’s cooked through (165°F/75°C).
Serving
  1. Once the chicken is tender and juices run clear, serve it atop your favorite bed of rice or alongside roasted vegetables.
  2. Sprinkle some fresh herbs for that finishing touch.

Notes

If you’re out of chicken broth, feel free to use vegetable broth. You can swap honey for maple syrup if desired. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
