  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder

Preparation
  1. Begin by dicing the onion and mincing the garlic. Rinse the white beans and measure out the remaining ingredients.
Cooking
  1. Place the chicken breasts at the bottom of the crockpot. Layer the diced onions and minced garlic on top of the chicken.
  2. Pour in the rinsed white beans and the can of diced tomatoes with their juices.
  3. Add the cumin, chili powder, salt, and pepper, stirring lightly to ensure even distribution.
  4. Add the chicken broth and corn, ensuring all ingredients are covered in liquid.
  5. Cover the crockpot and set it to cook on low for 6-8 hours, or on high for 3-4 hours.
  6. Once cooked, remove the chicken breasts, shred them with two forks, and return them to the pot. Stir well to combine everything.
  7. Dish out the chili into bowls and top with your choice of shredded cheese, diced avocado, and fresh cilantro.

Notes

You can easily substitute the chicken with turkey for a leaner option or use plant-based chicken for a vegetarian version. Avoid overcooking the chili, and don’t skip the garlic and spices for maximum flavor. Leftovers store well in the fridge for up to 4 days and can be frozen for up to 3 months.
