- Place the boneless, skinless chicken thighs into the crockpot.
- In a mixing bowl, combine the coconut milk, fresh lime juice, lime zest, soy sauce, minced garlic, minced ginger, brown sugar, salt, and pepper. Whisk until well blended.

Cooking
- Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours.
Serving
- Once cooked, shred the chicken with two forks and stir it back into the sauce.
- Serve hot, garnished with chopped fresh cilantro and lime wedges if desired.
