  • 1 can coconut milk (13.5 oz) Can substitute with coconut cream if diluted
  • 1/4 cup fresh lime juice
  • 2 tablespoons lime zest
  • 2 tablespoons soy sauce Tamari for gluten-free option
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Place the boneless, skinless chicken thighs into the crockpot.
  2. In a mixing bowl, combine the coconut milk, fresh lime juice, lime zest, soy sauce, minced garlic, minced ginger, brown sugar, salt, and pepper. Whisk until well blended.
  3. Pour the sauce over the chicken in the crockpot, ensuring it's evenly coated.
Cooking
  1. Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours.
Serving
  1. Once cooked, shred the chicken with two forks and stir it back into the sauce.
  2. Serve hot, garnished with chopped fresh cilantro and lime wedges if desired.

Notes

For deeper flavors, choose the low setting when slow cooking. Store leftovers in an airtight container in the refrigeration for up to 3 days, or freeze for up to 3 months.
