  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 packet (about 1 oz) taco seasoning
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
Serving Ingredients
  • Taco shells or tortillas for serving
  • Toppings: shredded cheese, avocado, lime wedges, lettuce, sour cream, salsa, and any other favorites!

Preparation
  1. Place the boneless, skinless chicken breasts in the bottom of your slow cooker.
  2. Sprinkle the diced onion and minced garlic over the chicken.
  3. Pour the can of diced tomatoes with green chilies over the chicken, then add the taco seasoning on top.
  4. Pour in the chicken broth, ensuring that everything is well soaked.
Cooking
  1. Cover your slow cooker and set it to low for 6-8 hours, or high for 4-5 hours.
  2. Once cooked, use two forks to shred the chicken right in the slow cooker and stir to mix with the juices.
Serving
  1. Load the chicken into taco shells or tortillas and top with your favorite toppings.

Notes

Consider making your own taco seasoning using spices like cumin, chili powder, and paprika. You can also swap chicken for turkey or shredded beef, keeping in mind possible cooking time variations. Ensure your slow cooker isn’t overcrowded for even cooking.
