  • 1 lb chicken breast Substitute with thighs for richer flavor.
  • 4 cups chicken broth
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 1 tsp garlic, minced
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 cups egg noodles Add closer to serving time to avoid mushiness.
  • Fresh parsley for garnish

Preparation
  1. Start by preparing your vegetables. Slice the carrots, celery, and dice the onion; set them aside.
  2. In your crockpot, place the chicken breast at the bottom. Layer the onions, carrots, and celery on top of the chicken.
  3. Add minced garlic and thyme, seasoning the mixture with salt and pepper to taste.
  4. Pour the chicken broth over the ingredients, ensuring everything is submerged. Cover the crockpot with the lid.
Cooking
  1. Cook on low heat for 6-8 hours or on high for 4-5 hours until the chicken is cooked through.
  2. About 30 minutes before you’re ready to serve, add the egg noodles to the pot, ensuring they become tender but not mushy.
  3. Once complete, shred the chicken using two forks and give the soup a gentle stir. Serve hot, garnished with fresh parsley.

Notes

For a hint of acidity, add a splash of lemon juice before serving to elevate the flavor. If using chicken thighs, adjust the cooking time slightly.
