  • 4 pieces boneless, skinless chicken breasts (approx. 1.5 lbs) Use fresh chicken for best texture and taste.
  • 1 can cream of chicken soup (10.5 oz)
  • 1 packet ranch seasoning mix (1 oz) Be cautious with salt since ranch seasoning already contains it.
  • 1 cup chicken broth
  • to taste salt
  • to taste pepper
  • 1 cup diced onions or other vegetables (optional) Add during the last hour for extra flavor.

Preparation
  1. Lightly spray your crockpot with non-stick spray for easy cleanup.
  2. In a medium bowl, combine the cream of chicken soup, ranch seasoning mix, and chicken broth. Stir until smooth.
  3. Place the chicken breasts in the crockpot, then pour the sauce mixture over the chicken, smothering each piece evenly.
  4. Sprinkle salt and pepper on top as desired, and add diced onions or any other vegetables if you’re using them.
  5. Set the slow cooker on low and let it cook for 5-6 hours.
  6. Once cooked, shred the chicken using two forks and stir it back into the gravy.
  7. Serve the creamy chicken on rice, mashed potatoes, or with your favorite vegetable side dish.

Notes

For thicker gravy, consider adding a bit of cornstarch mixed with water during the last hour of cooking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
