  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup cashews For added crunch
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1/2 cup onion, chopped
  • 1 cup bell peppers, chopped
  • 1 tsp ginger, minced
  • 2 tbsp cornstarch To thicken the sauce
  • 1/4 cup water

Method
 

Preparation
  1. Begin by cutting your chicken breast into bite-sized pieces. Chop the onion and bell peppers, and mince the garlic and ginger.
Mixing the Sauce
  1. In a bowl, whisk together the soy sauce, honey, garlic, ginger, and water.
Assembling the Crockpot
  1. Place the chicken pieces in the bottom of your crockpot. Pour the sauce mixture over the chicken. Add chopped onions and bell peppers evenly on top.
Cooking
  1. Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the chicken is fully cooked and tender.
Thickening the Sauce
  1. About 30 minutes before serving, mix the cornstarch with a little water to create a slurry. Stir it into the crockpot to thicken the sauce.
Final Touch
  1. Just before serving, stir in the cashews to add a delightful crunch!

Notes

For a nut-free option, you can substitute the cashews with sunflower seeds. Avoid overcooking the chicken to prevent dryness. Ensure your slow cooker isn’t overfilled for even cooking.
