Preparation
- Start by peeling and dicing the sweet potatoes into bite-sized pieces.
- In a large bowl, mix the diced sweet potatoes, brown sugar, melted butter, vanilla extract, cinnamon, nutmeg, and salt until well combined.
- Transfer the sweet potato mixture into your crock pot. Spread it out evenly.
Cooking
- Cover and cook on high for 3 to 4 hours, or until the sweet potatoes are fork-tender.
- Stir occasionally if possible, to allow the sweet potatoes to absorb the flavors evenly.
- About 10 to 15 minutes before serving, gently sprinkle mini marshmallows on top of the sweet potato mixture.
- Replace the lid to allow the marshmallows to melt and turn golden.
- Once the marshmallows are beautifully toasted, remove the crock pot from the heat.
