  • 1 cup brown sugar
  • ¼ cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 2 cups mini marshmallows

Preparation
  1. Start by peeling and dicing the sweet potatoes into bite-sized pieces.
  2. In a large bowl, mix the diced sweet potatoes, brown sugar, melted butter, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  3. Transfer the sweet potato mixture into your crock pot. Spread it out evenly.
Cooking
  1. Cover and cook on high for 3 to 4 hours, or until the sweet potatoes are fork-tender.
  2. Stir occasionally if possible, to allow the sweet potatoes to absorb the flavors evenly.
  3. About 10 to 15 minutes before serving, gently sprinkle mini marshmallows on top of the sweet potato mixture.
  4. Replace the lid to allow the marshmallows to melt and turn golden.
  5. Once the marshmallows are beautifully toasted, remove the crock pot from the heat.
Serving

Notes

To perfect your casserole, choose firm, evenly-sized sweet potatoes. Adjust spices based on your family’s preferences, and keep an eye on the marshmallows during the last minutes to prevent burning.
