  • 4 cups vegetable broth (or chicken broth)
  • 4 medium bell peppers (any colors, diced)
  • 1 cup uncooked rice (brown or white)
  • 1 pound ground turkey or beef (or a meat substitute) For a vegetarian version
  • 1 can diced tomatoes (14.5 ounces)
  • 1 whole onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon Italian seasoning
  • Salt and pepper (to taste)

Method
 

Preparation
  1. Dice the bell peppers, onion, and mince the garlic.
  2. In a skillet over medium heat, brown the ground turkey or beef until it’s cooked through. Drain any excess fat.
Cooking
  1. In your Crock Pot, combine the browned meat, diced bell peppers, onion, minced garlic, diced tomatoes, vegetable broth, rice, Italian seasoning, salt, and pepper.
  2. Mix everything well to ensure all ingredients are combined and the rice is submerged in the liquid.
  3. Cover your Crock Pot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once ready, give it a good stir and adjust the seasoning if needed. Serve hot with your favorite toppings!

Notes

For a delightful twist, substitute peppers with zucchini or eggplant. Enhance flavor with lemon juice or red pepper flakes. To avoid mushy rice, consider cooking rice separately and adding just before serving. Store leftovers in an airtight container in the fridge for up to 4 days.
