  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken broth (or vegetable broth for a vegetarian version)
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste

  • green onions Freshly chopped

Method
 

Preparation
  1. Begin by peeling and dicing your potatoes into bite-sized pieces. Don’t forget to chop your onion as well.
Combining Ingredients
  1. In your crock pot, add the diced potatoes, chopped onion, and the chicken or vegetable broth. Give everything a good stir.
Cooking
  1. Cover your crock pot with the lid and cook on low for 6-8 hours or on high for 3-4 hours.
  2. You want those potatoes to get nice and tender.
Finishing Touch
  1. Once the potatoes are soft, stir in the heavy cream and shredded cheese. Mix well and let it cook for an additional 30 minutes until everything is heated through and creamy.
Seasoning and Serving
  1. Taste the soup and add salt and pepper as needed.
  2. Ladle the soup into bowls and add your favorite toppings like green onions or a swirl of sour cream.

Notes

Store any remaining soup in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the soup in a freezer-safe container for up to 3 months. Reheat by thawing overnight and warming in a pot over low heat, adding broth or water if thickened.
