Preparation
  1. Start by washing and dicing your potatoes. Aim for uniform sizes to ensure even cooking. Chop the onion and mince the garlic for maximum flavor.
Cooking
  1. In your slow cooker, add the diced potatoes, chopped onion, and minced garlic. Pour in the chicken broth until your veggies are submerged.
  2. Cover the Crock Pot with the lid and set it to low for 6-8 hours or high for 3-4 hours.
  3. Once the cooking time is over, stir in the heavy cream for the ultimate creamy texture. Season with salt and pepper to taste.
  4. You can also use an immersion blender to puree your soup for an ultra-smooth finish, or leave it chunky if you prefer.

Notes

For best results, don’t lift the lid too often while cooking. To store, refrigerate for up to 4 days or freeze for up to 3 months, reheating gently with a splash of broth or cream.
