Preparation
- Start by prepping all your ingredients. Chop the onion and mince the garlic, making sure to have everything handy.
- In a skillet over medium heat, brown the ground beef (or your chosen alternative) until fully cooked. Drain any excess fat and set aside.
- In the Crock Pot, combine the browned meat, kidney beans, black beans, crushed tomatoes, chopped onion, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper.
- Stir all the ingredients together until well combined. Cover the pot with the lid.
Cooking
- Set your Crock Pot on low heat and let it cook for 6-8 hours, or on high heat for 3-4 hours.
- About 30 minutes before it's finished, taste for seasoning. Adjust salt and spices according to your preference.
Serving
- Once done, scoop your chili into bowls and add your favorite toppings. Enjoy!
Notes
Feel free to swap out beans with your favorites or add corn for sweetness. For a vegan option, consider using lentils instead of meat. When reheating, add a splash of water or broth to regain its original texture.
