Ingredients
  

For the soup base
  • 1 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 28 ounces can crushed tomatoes
  • 2 cups beef broth
  • 15 ounces can tomato sauce
  • 1 teaspoon Italian seasoning
  • 8 lasagna noodles, broken into pieces
For the cheesy finish
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

Preparation
  1. In a skillet over medium heat, cook the ground beef until it’s browned. Drain any excess fat.
  2. Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent and fragrant.
  3. Once cooked, transfer the beef mixture to your slow cooker.
Cooking
  1. Add the crushed tomatoes, beef broth, tomato sauce, and Italian seasoning to the slow cooker. Stir well to combine.
  2. Break the lasagna noodles into pieces and add them to the mixture, making sure they are submerged in the liquid.
  3. Cover the slow cooker and cook on low heat for 4-6 hours or until the noodles are tender.
  4. In the last few minutes of cooking, stir in the ricotta and mozzarella cheeses until melted and well incorporated.
  5. Taste and adjust seasoning with salt and pepper. Ladle into bowls and top with fresh basil.

Notes

For a vegetarian version, omit the ground beef and add extra vegetables like spinach, mushrooms, or zucchini. Avoid lifting the lid during cooking for best results.
