  • 2 cans 15 ounces each black beans, rinsed and drained Use canned black beans for convenience.
  • 1 medium onion, diced Diced onion adds flavor to the soup.
  • 2 cloves garlic, minced Garlic enhances the flavor profile.
  • 1 medium bell pepper, diced Use any color bell pepper for color and flavor.
  • 4 cups vegetable broth Can substitute with chicken broth for added flavor.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • to taste Salt & pepper Season according to your preference.

  • Sour cream For a creamy finish.

Preparation
  1. Start by dicing the onion and bell pepper, and mincing the garlic.
Cooking
  1. In your Crock Pot, add the rinsed black beans, diced onion, bell pepper, minced garlic, vegetable broth, cumin, chili powder, and smoked paprika.
  2. Sprinkle salt and pepper to your taste and give everything a good stir to mix the ingredients well.
  3. Cover the Crock Pot and cook on low for 6-8 hours or high for 3-4 hours, until everything feels tender and flavors meld.
  4. For a smoother texture, you can use an immersion blender to blend part of the soup, or transfer a portion to a blender. Blend until you reach your desired consistency.
  5. Ladle into bowls and garnish with your favorite toppings. Enjoy your comforting meal!

Notes

Store any uneaten soup in an airtight container in the refrigerator for up to 4 days. Freeze portions for up to 3 months.
