- Start by dicing the onion and bell pepper, and mincing the garlic.
Cooking
- In your Crock Pot, add the rinsed black beans, diced onion, bell pepper, minced garlic, vegetable broth, cumin, chili powder, and smoked paprika.
- Sprinkle salt and pepper to your taste and give everything a good stir to mix the ingredients well.
- Cover the Crock Pot and cook on low for 6-8 hours or high for 3-4 hours, until everything feels tender and flavors meld.
- For a smoother texture, you can use an immersion blender to blend part of the soup, or transfer a portion to a blender. Blend until you reach your desired consistency.
- Ladle into bowls and garnish with your favorite toppings. Enjoy your comforting meal!

Store any uneaten soup in an airtight container in the refrigerator for up to 4 days. Freeze portions for up to 3 months.
