  • 4 carrots, sliced
  • 4 potatoes, diced Yukon Gold or Russet work well.
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons Worcestershire sauce (ensure it’s alcohol-free)

Preparation
  1. Begin by cutting your beef chuck into 1-inch cubes and chopping your vegetables.
Browning the Beef
  1. For extra flavor, brown the beef in a skillet with a bit of oil before adding it to the crock pot.
Layering
  1. In your slow cooker, place the beef at the bottom, followed by the chopped onion, sliced carrots, and diced potatoes.
Mixing Liquids
  1. In a separate bowl, combine the beef broth, minced garlic, tomato paste, dried thyme, rosemary, Worcestershire sauce, salt, and pepper. Stir well.
Cooking
  1. Pour the mixture over the layered ingredients in the crock pot.
  2. Cover the slow cooker with the lid and set it to low for 8 hours or high for 4 hours.
Finishing Touches
  1. Once the time is up, stir the stew gently, taste it, and adjust seasoning if necessary. Serve hot with your favorite bread!

Notes

For a thicker stew, mix a tablespoon of cornstarch with cold water and stir into the simmering stew for the last 30 minutes. Store leftovers in an airtight container in the refrigerator for up to 3 days.
