Ingredients
  

For the Zucchini Crust
  • 2 medium medium zucchinis, grated Choose firm zucchinis for the best flavor.
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
For Assembly
  • 1/2 cup pizza sauce
  • Toppings of choice (pepperoni, vegetables, etc.) Consider Halal-friendly toppings.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) to prepare for baking the pizza crust.
  2. Grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel and twist to squeeze out excess moisture.
  3. In a large bowl, combine the squeezed zucchini, shredded mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Stir until fully combined.
  4. Line a baking sheet with parchment paper. Using your hands, press the zucchini mixture into a round pizza shape on the baking sheet.
Baking
  1. Bake the crust in the preheated oven for about 20 minutes or until golden brown and crispy.
  2. Remove the crust from the oven, spread the pizza sauce on top, and add your desired toppings.
  3. Return the pizza to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.
  4. Allow it to cool slightly, slice into wedges, and serve hot!

Notes

Store leftovers in an airtight container for up to 3 days. Freeze pieces for up to a month. Reheat in the oven at 375°F (190°C) for 10-15 minutes.
