  • 1 cup salsa For that juicy tang.
  • 2 cups shredded cheese Choose your favorite melting cheese; cheddar works great.
  • 1 bag Tortilla chips For that crispy base, use your preferred brand.

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure a perfectly baked casserole.
  2. In a large skillet, brown the ground beef over medium heat, breaking it apart until fully cooked (approximately 8-10 minutes). Drain excess fat.
  3. Stir in the drained black beans, corn, taco seasoning, and salsa with the cooked beef. Cook for an additional 5 minutes until heated through.
  4. In a baking dish, create a layer with tortilla chips at the bottom. Pour the beef mixture evenly over the tortilla chips.
  5. Add shredded cheese on top, covering the beef mixture generously.
  6. Place the casserole in the preheated oven and bake for about 15-20 minutes or until the cheese is melted and bubbly.
  7. Garnish with green onions and serve with sour cream on the side. Enjoy your mouthwatering dish with loved ones!

Notes

For vegetarian version, swap ground beef with textured vegetable protein (TVP) or additional canned beans. Pay close attention during the baking time. Store leftovers in an airtight container in the fridge for up to 3 days.
