  • 2 cups Fresh spinach, chopped Use fresh spinach for best flavor.
  • 1 cup Feta cheese, crumbled Use tangy feta for optimal taste.
  • 1 small Onion, finely chopped Provides flavor to the filling.
  • 2 cloves Garlic, minced Enhances aroma and flavor.
  • 2 tablespoons Olive oil, for sautéing Use extra virgin for best results.
  • 1/4 cup Butter, melted, for brushing For brushing phyllo layers.
  • to taste Salt and pepper Adjust seasoning to preference.
Main Ingredients
  • 1 package Phyllo pastry, thawed Ensure it is fully thawed before use.

Method
 

Preparation
  1. In a skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until fragrant and the onion is translucent.
  2. Add the chopped spinach, cooking until wilted. Remove from heat and stir in the crumbled feta cheese. Season with salt and pepper to taste.
Baking
  1. Preheat the oven to 375°F (190°C).
  2. Lay out one sheet of phyllo on a clean surface. Brush it lightly with melted butter. Layer another sheet on top and brush with butter again. Repeat this process for about four layers.
  3. Cut the layered phyllo into squares (about 4x4 inches). Place a spoonful of the spinach and feta filling in the center of each square.
  4. Fold the corners of the phyllo over the filling to create a small parcel. Brush the tops with a little more melted butter.
  5. Arrange the phyllo bites on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown and crispy.

Notes

Leftover phyllo bites can be stored in an airtight container in the refrigerator for up to three days. Reheat in the oven for best texture. You can also freeze unbaked bites and bake from frozen adjusting the cooking time.
