Preparation
- In a large pot, fill with water and add the red potatoes. Bring to a boil over high heat and let them cook for 15-20 minutes until fork-tender.
- While the potatoes are boiling, preheat your oven to 450°F (230°C).
- Once cooked, drain the potatoes and place them on a baking sheet lined with parchment paper.
- Using a potato masher or the bottom of a glass, gently smash each potato until it flattens to about 1/2-inch thickness.
- Drizzle the olive oil over the smashed potatoes and sprinkle with garlic powder, salt, and black pepper.
Cooking
- Place the baking sheet in the preheated oven and bake for 25-30 minutes or until the potatoes are crispy and golden brown.
- Once done, remove from the oven and sprinkle with fresh parsley for a pop of color and flavor.
- Serve hot and watch them disappear!
Notes
If you have leftovers, store your Crispy Smashed Red Potatoes in an airtight container in the refrigerator for up to 3 days. You can reheat them in the oven at 375°F (190°C) for about 15 minutes or on the stovetop in a skillet with a touch of olive oil.
