  • 1.5 lbs red potatoes Opt for red potatoes for their creamy texture and ability to hold their shape.
  • 3 tablespoons olive oil Ensure you coat the potatoes well for crispy exterior.
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped For garnish.

Method
 

Preparation
  1. In a large pot, fill with water and add the red potatoes. Bring to a boil over high heat and let them cook for 15-20 minutes until fork-tender.
  2. While the potatoes are boiling, preheat your oven to 450°F (230°C).
  3. Once cooked, drain the potatoes and place them on a baking sheet lined with parchment paper.
  4. Using a potato masher or the bottom of a glass, gently smash each potato until it flattens to about 1/2-inch thickness.
  5. Drizzle the olive oil over the smashed potatoes and sprinkle with garlic powder, salt, and black pepper.
Cooking
  1. Place the baking sheet in the preheated oven and bake for 25-30 minutes or until the potatoes are crispy and golden brown.
  2. Once done, remove from the oven and sprinkle with fresh parsley for a pop of color and flavor.
  3. Serve hot and watch them disappear!

Notes

If you have leftovers, store your Crispy Smashed Red Potatoes in an airtight container in the refrigerator for up to 3 days. You can reheat them in the oven at 375°F (190°C) for about 15 minutes or on the stovetop in a skillet with a touch of olive oil.
