Preparation of Rice
- Rinse 1 cup of sushi rice under cold water until the water runs clear.
- Combine the rinsed rice with 2 cups of water in a pot, bring to a boil, cover, and reduce heat to low.
- Let it simmer for about 18-20 minutes until tender.
Preparation of Shrimp
- In a bowl, season the shrimp with salt and pepper.
- In another bowl, prepare three stations: one with cornstarch, another with the beaten egg, and the last with breadcrumbs.
Coating and Frying Shrimp
- Dredge each shrimp in cornstarch, dip it into the egg, and finally coat it in breadcrumbs.
- In a large skillet, heat sesame oil over medium heat.
- Once hot, add the shrimp in batches, frying for about 2-3 minutes on each side until golden brown.
- Remove and set on paper towels to absorb excess oil.
Assembling the Bowl
- Fluff the rice with a fork and season with soy sauce.
- In serving bowls, start with a base of rice, add crispy shrimp, and top with avocado and cucumber slices.
- Drizzle some sriracha over the top for a spicy kick.
- Garnish with seaweed and green onions if desired.
