Ingredients
  

For the rice
  • 1 cup sushi rice Rinsed under cold water
  • 2 cups water For cooking rice
For the shrimp
  • 1 pound shrimp, peeled and deveined
  • 1/2 cup breadcrumbs Panko works best for crunch
  • 2 tablespoons cornstarch
  • 1 large egg, beaten
  • 1 tablespoon soy sauce Ensure it’s Halal-certified
  • 1 tablespoon sesame oil For frying
  • 1 tablespoon sriracha Adjust to taste
  • to taste salt and pepper
For the toppings
  • 1 ripe avocado, sliced
  • 1 small cucumber, thinly sliced
  • optional seaweed strips For garnish
  • optional green onions For garnish

Method
 

Preparation of Rice
  1. Rinse 1 cup of sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice with 2 cups of water in a pot, bring to a boil, cover, and reduce heat to low.
  3. Let it simmer for about 18-20 minutes until tender.
Preparation of Shrimp
  1. In a bowl, season the shrimp with salt and pepper.
  2. In another bowl, prepare three stations: one with cornstarch, another with the beaten egg, and the last with breadcrumbs.
Coating and Frying Shrimp
  1. Dredge each shrimp in cornstarch, dip it into the egg, and finally coat it in breadcrumbs.
  2. In a large skillet, heat sesame oil over medium heat.
  3. Once hot, add the shrimp in batches, frying for about 2-3 minutes on each side until golden brown.
  4. Remove and set on paper towels to absorb excess oil.
Assembling the Bowl
  1. Fluff the rice with a fork and season with soy sauce.
  2. In serving bowls, start with a base of rice, add crispy shrimp, and top with avocado and cucumber slices.
  3. Drizzle some sriracha over the top for a spicy kick.
  4. Garnish with seaweed and green onions if desired.

Notes

If shrimp isn’t your thing, consider using Halal chicken breast or tofu for a vegetarian twist. Ensure your oil is hot before frying for the crispiest shrimp. Store leftovers in an airtight container and reheat in an oven or air fryer.
