Ingredients
  

For the dumplings
  • 10 pieces Rice paper sheets
  • 1 pound Ground meat (chicken or shrimp)
  • 2 cups Vegetables (cabbage, carrots, bell peppers), finely chopped Feel free to use a mix of your favorite vegetables.
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoons Soy sauce
  • 1 teaspoon Black pepper
  • 1 cup Oil (for frying) Use an oil with a high smoke point.

Method
 

Preparation
  1. In a large bowl, combine the ground meat, cabbages, carrots, bell peppers, minced garlic, minced ginger, soy sauce, and black pepper. Mix until well combined.
  2. Fill a large bowl or shallow dish with warm water. Dip one rice paper sheet into the water for about 5 seconds, just until softened.
  3. Place the softened rice paper on a clean surface. Spoon 2 tablespoons of the filling onto the lower third of the rice paper sheet. Fold the sides over the filling, then roll it up tightly from the bottom to the top. Repeat this step for the remaining rice paper sheets and filling.
  4. In a deep skillet or frying pan, heat the oil over medium-high heat. Carefully add the dumplings to the hot oil in batches, frying for about 3-4 minutes on each side or until golden brown. Remove and place on a plate lined with paper towels to absorb excess oil.
  5. Serve your Crispy Rice Paper Dumplings warm with a side of your favorite dipping sauce, and watch them disappear!

Notes

For a vegetarian option, substitute the ground meat for tofu or additional vegetables. Avoid overcrowding the pan while frying to maintain crispiness. Store leftovers in an airtight container for up to 3 days.
