Preparation
- Preheat your oven to 425°F (220°C) and lightly grease a baking sheet with non-stick spray or oil.
- In a skillet over medium heat, brown the ground beef, breaking it apart with a spatula. Drain excess fat and season with salt, pepper, and taco seasoning. Cook until flavors meld, about 5-7 minutes.
- While the beef is cooking, microwave the tortillas for about 30 seconds to soften them.
- On each tortilla, place a generous spoonful of the beef mixture and a handful of shredded cheese. If desired, add chopped cilantro. Roll the tortilla tightly from one end to the other.
- Place the rolled taquitos seam-side down on the baking sheet. Brush the tops lightly with vegetable oil.
Baking
- Bake in the preheated oven for 15-20 minutes or until golden brown and crispy, flipping halfway through for even cooking.
Serving
- Once baked, remove from the oven and let them cool for a few minutes. Serve with sour cream, salsa, and lime wedges.
Notes
For best results, use smaller corn tortillas for easier rolling. Substitute ground beef with ground chicken or turkey if desired. Feel free to add finely chopped vegetables to the beef mixture.
