Ingredients
  

Chicken and Marinade
  • 1 lb boneless and skinless chicken thighs
  • 1/2 cup soy sauce For marinade
  • 1 tsp garlic powder For marinade
  • 1 tsp ginger powder For marinade
Coating
  • 1 cup all-purpose flour
  • 1/2 cup potato starch Can substitute with corn starch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 whole eggs Beaten
Frying
  • Vegetable oil N/A for frying About 2 inches in deep frying pan

Method
 

Preparation
  1. In a mixing bowl, combine soy sauce, garlic powder, and ginger powder. Cut the chicken into bite-sized pieces and marinate in the mixture for about 15-30 minutes.
  2. In a separate bowl, mix all-purpose flour, potato starch, salt, and black pepper.
  3. In another bowl, whisk the eggs until light and fluffy.
Coating the Chicken
  1. After marinating the chicken, dip each piece into the egg mixture, then coat with the flour and potato starch mixture.
Frying
  1. Heat about 2 inches of vegetable oil in a deep frying pan or pot over medium heat.
  2. Fry coated chicken pieces for about 5-7 minutes until golden brown and cooked through. Use a slotted spoon to remove and place on a paper towel-lined plate.
Serving
  1. Serve hot garnished with fresh herbs or a drizzle of soy sauce.

Notes

For best results, marinate chicken long enough and do not overcrowd the frying pan to avoid greasy chicken. Store leftovers in an airtight container for up to 3 days.
