Ingredients
  

For the Filling
  • 2 cups cooked shredded chicken
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños (fresh or pickled)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
For Assembly
  • 8 small flour tortillas
  • Oil for frying

Method
 

Preparation
  1. In a large mixing bowl, combine the cooked shredded chicken, softened cream cheese, shredded cheddar cheese, diced jalapeños, garlic powder, onion powder, salt, and pepper. Stir until you have a smooth and well-mixed filling.
  2. Take one flour tortilla and spoon about 2-3 tablespoons of the filling onto one end. Roll the tortilla tightly around the filling, making sure to tuck in the sides as you go to prevent spillage. Repeat this process until all the filling is used.
Cooking
  1. In a large skillet, heat about 1/2 inch of oil over medium heat until it's hot but not smoking.
  2. Carefully place 2-3 taquitos in the hot oil (do not overcrowd the pan). Fry for about 3-4 minutes on each side until golden brown and crispy.
  3. Once the taquitos are crispy and golden, remove them from the oil and place them on a plate lined with paper towels to absorb excess oil.
Serving
  1. Serve hot with your favorite dipping sauces!

Notes

You can substitute other cooked meats like turkey or use a plant-based protein for a vegetarian option. Keep an eye on frying time, as each stove may differ. Don't overfill the tortillas to prevent bursting during frying. Store in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in the oven at 375°F for about 10-15 minutes.
