Ingredients
  

For the Chalupa Shells
  • 12 small Corn tortillas Use large tortillas cut into halves or quarters if preferred.
  • 1/2 inch Vegetable oil for frying Ensure enough oil to cover the bottom of the skillet.
For the Toppings
  • 1 can Refried beans Canned or homemade.
  • 1 cup Chopped tomatoes
  • 2 cups Chopped lettuce
  • 1/2 cup Sour cream Optional for topping.
  • 1 cup Shredded cheese Your choice.
  • to taste Sliced jalapeƱos
  • 1 Avocado Sliced.
  • Salsa For serving.

Method
 

Preparation
  1. Prepare the tortillas by cutting large ones into halves or quarters.
  2. In a large skillet, pour enough vegetable oil to cover the bottom (approximately 1/2 inch deep) and heat it over medium-high heat.
Cooking
  1. Once the oil is hot, carefully add the tortillas one at a time and fry for about 1-2 minutes on each side or until golden and crispy.
  2. Use tongs to flip the tortillas.
  3. Place the fried tortillas on a paper towel-lined plate to drain excess oil.
Assembly
  1. Spread a layer of refried beans over each crispy tortilla.
  2. Add toppings such as tomatoes, lettuce, cheese, jalapeƱos, avocado, and salsa.
  3. Serve immediately and let everyone build their own chalupa creations.

Notes

To enhance your chalupas, use oils with a high smoke point for frying, ensure the oil is hot enough to maintain crunch, and feel free to customize your toppings for a unique twist. Store leftover chalupa shells separately from toppings in an airtight container in the refrigerator for up to 3 days.
