  • 8 oz Halloumi cheese, sliced into ½-inch pieces
  • 2 medium Sweet potatoes, diced into 1-inch cubes
  • 3 tablespoons Olive oil + extra for frying
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon Paprika
  • Fresh herbs (like parsley or cilantro), for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the diced sweet potatoes with 2 tablespoons of olive oil, salt, pepper, and paprika. Toss until evenly coated and spread them out on a baking sheet.
Cooking
  1. Roast the sweet potatoes for about 20-25 minutes, flipping them halfway through.
  2. In a non-stick skillet over medium heat, add a little olive oil and cook the halloumi slices for about 2-3 minutes on each side until crispy and golden.
Assembly
  1. Layer the roasted sweet potatoes and halloumi in a serving dish. Add your choice of optional toppings and sprinkle with fresh herbs.

Notes
