Preparation
- Start by grating the zucchinis using a box grater. Place the grated zucchini in a clean towel or cheesecloth and squeeze out the excess moisture.
- In a mixing bowl, combine the grated zucchini, salt, breadcbs, Parmesan cheese, minced garlic, parsley, egg, black pepper, and Italian seasoning. Stir until everything is well incorporated.
- With clean hands, take a small amount of the mixture (about a tablespoon) and roll it into a ball. Repeat until all the mixture is used, placing the balls on a parchment-lined baking sheet.
- Preheat your oven to 400°F (200°C).
Baking
- Lightly spray the zucchini balls with olive oil spray to help them crisp up. Place them in the oven and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Once baked, let them cool for a few minutes before enjoying them with your favorite dipping sauce.
Notes
For perfect texture, make sure to squeeze out as much moisture from the zucchini as possible. For a gluten-free option, substitute regular breadcbs with gluten-free varieties.
