Ingredients
  

For the Zucchini Balls
  • 2 medium zucchinis, grated Ensure to squeeze out moisture
  • 1 teaspoon salt
  • 1 cup breadcbs (panko works great)
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 large egg
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • as needed Olive oil spray For added crispiness

Method
 

Preparation
  1. Start by grating the zucchinis using a box grater. Place the grated zucchini in a clean towel or cheesecloth and squeeze out the excess moisture.
  2. In a mixing bowl, combine the grated zucchini, salt, breadcbs, Parmesan cheese, minced garlic, parsley, egg, black pepper, and Italian seasoning. Stir until everything is well incorporated.
  3. With clean hands, take a small amount of the mixture (about a tablespoon) and roll it into a ball. Repeat until all the mixture is used, placing the balls on a parchment-lined baking sheet.
  4. Preheat your oven to 400°F (200°C).
Baking
  1. Lightly spray the zucchini balls with olive oil spray to help them crisp up. Place them in the oven and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  2. Once baked, let them cool for a few minutes before enjoying them with your favorite dipping sauce.

Notes

For perfect texture, make sure to squeeze out as much moisture from the zucchini as possible. For a gluten-free option, substitute regular breadcbs with gluten-free varieties.
