  • 2 pounds baby potatoes (halved)
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • to taste fresh parsley (chopped, for garnish)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Halve the baby potatoes and place them into a large mixing bowl.
  3. Drizzle the olive oil over the potatoes. Add the minced garlic, dried oregano, salt, and black pepper. Toss everything together until the potatoes are evenly coated.
  4. Gradually sprinkle the grated Parmesan cheese over the seasoned potatoes while tossing lightly to ensure every piece is covered.
  5. Spread the potatoes out in a single layer on a baking sheet lined with parchment paper.
Cooking
  1. Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
  2. Remove from the oven and sprinkle with fresh chopped parsley before serving.

Notes

For best results, avoid overcrowding the baking sheet and adjust cooking time if needed. Leftovers can be stored in an airtight container for up to 3 days.
