Ingredients

For the Fries
  • 2 large russet potatoes You can substitute with Yukon Gold or sweet potatoes.
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • ½ cup grated parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • Fresh parsley, chopped Optional for garnish.

Method

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the russet potatoes. Slice them into even wedges or sticks – about ¼ inch thick for optimal crispness.
  3. Soak the potato fries in cold water for 30 minutes to remove excess starch.
  4. Drain and pat the potato fries dry with a kitchen towel.
Cooking
  1. In a large mixing bowl, toss the dried potato fries with olive oil, salt, and pepper until they’re well-coated.
  2. Spread the fries out in a single layer on a parchment-lined baking sheet and bake for 20 minutes, flipping halfway through.
  3. In a small saucepan, melt the unsalted butter over low heat. Add minced garlic and cook for about 1-2 minutes, until fragrant but not browned.
  4. Once the fries are done baking, pour the garlic butter mixture over the hot fries. Sprinkle the grated parmesan cheese and toss until evenly coated.
  5. Transfer the fries to a serving platter, garnish with fresh parsley if desired, and enjoy immediately while they’re hot and crispy!

Notes

If you have any leftover fries, store them in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 400°F (200°C) for about 10-15 minutes to restore crispiness.
