  • 2 large large eggs
  • 60 grams feta cheese, crumbled Look for quality feta, preferably made from sheep’s milk.
  • 2 tablespoons olive oil Use good quality olive oil for frying.
  • to taste teaspoon salt
  • to taste teaspoon pepper
Optional Garnish
  • 1 tablespoon fresh herbs (dill or parsley) Fresh herbs brighten the dish.

Method
 

Preparation
  1. In a non-stick frying pan, heat the olive oil over medium heat until it shimmers.
Cooking
  1. Once the oil is hot, add the crumbled feta cheese and let it cook for about 1-2 minutes to get crispy.
  2. Gently crack in the eggs over the feta, being careful not to break the yolks. Season with salt and pepper.
  3. Cook for about 3-4 minutes, until the egg whites are set and the edges are golden brown.
  4. For an extra crispy texture, flip the eggs and cook for another minute or serve sunny-side up.
Serving
  1. Remove from heat, garnish with fresh herbs if desired, and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stove over low heat. Avoid microwave reheating as it may make them rubbery.
