- In a non-stick frying pan, heat the olive oil over medium heat until it shimmers.
Cooking
- Once the oil is hot, add the crumbled feta cheese and let it cook for about 1-2 minutes to get crispy.
- Gently crack in the eggs over the feta, being careful not to break the yolks. Season with salt and pepper.
- Cook for about 3-4 minutes, until the egg whites are set and the edges are golden brown.
- For an extra crispy texture, flip the eggs and cook for another minute or serve sunny-side up.
Serving
- Remove from heat, garnish with fresh herbs if desired, and serve immediately.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stove over low heat. Avoid microwave reheating as it may make them rubbery.
