  • 8 oz cream cheese, softened
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder

Method
 

Preparation
  1. In a large mixing bowl, combine cooked shredded chicken, softened cream cheese, shredded cheese, chopped green onions, garlic powder, and onion powder. Season with salt and pepper to taste. Mix until well combined.
Rolling
  1. Warm the flour tortillas slightly in the microwave for about 15-20 seconds to make them more pliable. Take a tortilla and spoon about 2 tablespoons of the chicken mixture onto one end. Roll it tightly, ensuring the filling is secure. Repeat with the remaining tortillas and filling.
Frying
  1. In a large skillet, heat about 1-inch of oil over medium heat. Once the oil is hot, carefully add the rolled taquitos seam-side down. Fry them in batches, cooking for 3-4 minutes on each side or until they are golden brown and crispy. Use tongs for flipping!
  2. Once cooked, place taquitos on a plate lined with paper towels to absorb excess oil.
Serving
  1. Serve your beautifully crispy taquitos with a side of salsa, guacamole, or your favorite dipping sauce. Enjoy!

Notes

To keep things halal-friendly, make sure your chicken is halal-certified. You could also try adding chopped bell peppers or beans for extra flavor and nutrients. Keep an eye on the oil temperature and make sure to seal the tortillas tightly to prevent the filling from escaping during frying.
