Rolling
- Warm the flour tortillas slightly in the microwave for about 15-20 seconds to make them more pliable. Take a tortilla and spoon about 2 tablespoons of the chicken mixture onto one end. Roll it tightly, ensuring the filling is secure. Repeat with the remaining tortillas and filling.
Frying
- In a large skillet, heat about 1-inch of oil over medium heat. Once the oil is hot, carefully add the rolled taquitos seam-side down. Fry them in batches, cooking for 3-4 minutes on each side or until they are golden brown and crispy. Use tongs for flipping!
- Once cooked, place taquitos on a plate lined with paper towels to absorb excess oil.
Serving
