Ingredients
  

For the Fritters
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped Can substitute with cilantro or mint
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • Oil for frying Enough to cover the bottom of the pan

Method
 

Preparation
  1. Start by draining and rinsing the can of chickpeas. Once rinsed, use the back of a fork to mash them lightly in a mixing bowl.
  2. Add the breadcrumbs, chopped onion, minced garlic, parsley, cumin, paprika, salt, and pepper to the bowl with the mashed chickpeas. Stir until all ingredients are combined well.
  3. With clean hands, take small amounts of the mixture and form them into small patties or balls, roughly the size of a golf ball.
  4. In a large frying pan, add enough oil to cover the bottom. Heat the oil over medium heat until it's hot but not smoking (around 350°F or 180°C).
  5. Carefully add the chickpea fritters to the pan in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side or until they are golden brown and crispy.
  6. Once cooked, transfer them to a paper towel-lined plate to drain any excess oil. Serve hot with your favorite dipping sauce or as part of a larger meal.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. For longer storage, freeze the fritters in a single layer on a baking sheet until firm, then transfer to a freezer-safe bag. Reheat in the oven at 375°F (190°C) for 10-15 minutes or in an air fryer.
