Ingredients

Main Ingredients
  • 1 can chickpeas, drained and rinsed Use a 15 oz can.
  • 1/2 cup breadcrumbs Can be substituted with crushed cornflakes or oats.
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and pepper
  • Oil for frying Enough to cover the bottom of the pan.

Method

Preparation
  1. In a mixing bowl, mash the drained and rinsed chickpeas with a fork or potato masher until they’re mostly smooth but still have some texture.
  2. Add in the breadcrumbs, chopped onion, minced garlic, parsley, cumin, paprika, salt, and pepper into the chickpea mash. Stir until well combined.
  3. Using your hands, shape the mixture into small patties or fritters, making sure they hold together well. You should get about 8-10 fritters depending on the size.
  4. In a large frying pan, add enough oil to cover the bottom of the pan. Heat the oil over medium heat until it shimmers.
  5. Carefully place the fritters in the hot oil, leaving enough space between them to fry evenly. Fry for 3-4 minutes on each side or until golden brown and crispy.
  6. Once cooked, transfer the fritters to a paper towel-lined plate to absorb excess oil.
  7. Serve them warm with your favorite dipping sauce, such as tahini or a yogurt-based dip.

Notes

For best results, ensure chickpeas are well-drained. To keep fritters crispy, reheat in the oven rather than the microwave. Can substitute breadcrumbs for gluten-free options.
