Ingredients

For the Crispy Chicken Tacos
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour, for dredging
  • 2 large eggs, lightly beaten
  • 1 cup breadcrumbs, preferably panko for extra crunch
  • 1 teaspoon paprika for added flavor
  • 1 teaspoon garlic powder to enhance the taste
  • Salt and pepper to taste
  • 8 small tortillas, corn or flour whichever you prefer
  • 1 cup shredded lettuce, for topping
  • 1 cup diced tomatoes, to add freshness
For the Creamy Salsa Dip
  • 1 cup sour cream, this will be the base
  • 1/2 cup salsa, choose your favorite
  • 1 teaspoon lime juice, for a zesty twist
  • Salt and pepper to taste

Method

Preparation
  1. Start by cutting the chicken breasts into bite-sized pieces. Season with salt, pepper, paprika, and garlic powder.
  2. Create a dredging station by placing the flour, beaten eggs, and breadcrumbs in separate bowls.
  3. Dip a piece of chicken in the flour, then into the egg, and finally coat it with the breadcrumbs. Repeat with all chicken pieces.
Cooking
  1. In a large skillet, heat oil over medium heat. Carefully place the coated chicken pieces in the skillet and fry for about 4-5 minutes on each side or until golden brown and cooked through.
  2. Drain the fried chicken on paper towels.
Preparing the Dip
  1. While the chicken is frying, mix together sour cream, salsa, lime juice, salt, and pepper in a bowl until well combined.
Assembling the Tacos
  1. Warm the tortillas in a separate pan or microwave. Fill each tortilla with crispy chicken, shredded lettuce, and diced tomatoes.
Serving
  1. Serve the tacos hot with a side of creamy salsa dip for a delightful meal!

Notes

For substitutions, consider chicken thighs for a richer flavor or gluten-free breadcrumbs if desired. Ensure oil is hot before frying and avoid overcrowding the skillet.
