  • 4 cups cooked chicken, shredded
  • 2 cups marinara sauce
  • 2 cups cooked pasta (penne or rotini)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
Topping
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, marinara sauce, cooked pasta, garlic powder, Italian seasoning, salt, and pepper. Stir until well mixed.
  3. Lightly grease a 9×13 inch casserole dish with olive oil.
  4. Spoon the chicken and pasta mixture into the prepared dish, spreading it out evenly.
  5. Sprinkle the shredded mozzarella and grated Parmesan over the chicken mixture.
  6. In a small bowl, combine the breadcrumbs with the remaining olive oil and mix well. Sprinkle the topping over the cheese layer.
Baking
  1. Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and the cheese is bubbly.
Serving
  1. Once out of the oven, let it cool for a few minutes before serving.

Notes

Can use whole-grain pasta or add sautéed vegetables for a healthier option. Store leftovers in an airtight container for 3-4 days, or freeze before baking for up to 2 months.
