Preparation
- Wash the potatoes thoroughly to remove any dirt, then dice them into even pieces, about 1/2 inch thick.
- Place the diced potatoes into a pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook for 5-7 minutes until fork-tender but not falling apart.
- Carefully drain the potatoes and spread them out on a kitchen towel or in a single layer on a baking sheet to cool for about 5-10 minutes.
Cooking
- In a large skillet, heat the olive oil over medium heat. Add the cooled potatoes without crowding the pan.
- Sprinkle with salt, pepper, garlic powder, and onion powder. Cook undisturbed for 5 minutes to develop a nice brown crust.
- Gently flip the potatoes to cook the other side, cooking for an additional 5-7 minutes until golden brown and crispy.
Serving
- Remove from heat and garnish with chopped fresh parsley. Serve hot as a side dish or the star of your breakfast.
Notes
For best results, avoid overcrowding the pan while cooking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven or skillet.
