Preparation
  1. Preheat your Blackstone griddle to medium-high heat.
  2. If using frozen hash browns, thaw them slightly and spread evenly across the griddle.
  3. Drizzle with oil or melt butter over them, season with salt and pepper.
Cooking
  1. Cook hash browns for about 5-7 minutes until crispy and golden brown, then flip and cook the other side for an additional 5 minutes.
  2. In a bowl, whisk the eggs with a pinch of salt and pepper; mix in vegetables if using.
  3. Pour the egg mixture over the crispy hash browns for even coverage.
  4. Sprinkle cheese over the top, cover the griddle and cook for 3-5 minutes until eggs are set.
  5. Fold the omelette in half and cook for another minute.
  6. Plate the omelette, garnish with desired toppings, and serve.
