Ingredients
  

For the Falafel
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon flour (or chickpea flour)
  • Olive oil (for drizzling)
For Serving
  • Whole wheat wraps or pita bread
  • Lettuce, tomatoes, cucumbers, and tahini sauce for serving

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a food processor, add the drained chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, salt, pepper, and flour. Pulse until the mixture is well-combined but still has some texture.
  3. Using your hands, form small balls or patties from the mixture, about the size of a golf ball.
  4. Place the formed falafel on a baking sheet lined with parchment paper. Drizzle a little olive oil over each falafel.
Baking
  1. Bake the falafel for about 25-30 minutes, flipping them halfway through, until golden brown and crispy.
Assembly
  1. Once baked, remove the falafel from the oven. Place them into wraps or pita bread, and add your preferred toppings of lettuce, tomatoes, cucumbers, and tahini sauce.

Notes

To store leftovers, keep them in an airtight container in the refrigerator for up to three days. They can also be frozen for longer storage. Reheat in an oven at 350°F (175°C) for 10-15 minutes before serving.
