Ingredients
  

For the Squash
  • 2 medium yellow squash, sliced into thin rounds
  • 1 cup breadcrumbs (panko works best)
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg, beaten
  • Cooking spray or olive oil (for drizzling)

Method
 

Preparation
  1. Rinse the yellow squash under cold water and slice them into thin rounds, about 1/4 inch thick.
  2. In one bowl, whisk together the egg. In another bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
Coating
  1. Dip each squash slice into the beaten egg, allowing any excess to drip off. Then, coat it with the breadcrumb mixture, pressing gently to ensure a good covering.
Cooking
  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Spray the air fryer basket with cooking spray. Arrange the coated squash slices in a single layer, ensuring they don’t overlap.
  3. Cook the squash in the air fryer for about 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
Serving
  1. Remove the crispy yellow squash from the air fryer and serve hot with your favorite dipping sauce or as a side dish to main meals.

Notes

Cut the squash into uniform rounds for even cooking. Experiment with other spices like Italian seasoning or paprika. Avoid overcrowding the air fryer to ensure crispiness.
