- In a third bowl, combine the bread crumbs with garlic powder, onion powder, paprika, salt, and pepper.
Breading the Eggplant
- Pat the eggplant slices dry using a paper towel.
- Dip each slice in flour, followed by the egg mixture, and then coat it thoroughly with the seasoned bread crumbs.
Cooking
- Preheat your air fryer to 375°F (190°C).
- Lightly spray the air fryer basket with olive oil to prevent sticking.
- Place the coated eggplant slices in a single layer in the basket, making sure not to crowd them.
- Lightly spray the tops of the slices with more olive oil.
- Air fry the eggplant for about 12-15 minutes, flipping halfway through, until golden brown and crispy.
Serving
- Once done, remove from the air fryer and serve hot. Enjoy alone or with your favorite dip!
