Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Make sure the butter is at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup heavy cream
For the Topping
  • 1/4 cup granulated sugar for caramelizing Use a kitchen torch or broiler to caramelize.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes with an electric mixer).
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter mixture, stirring until just combined.
  5. Fold in the heavy cream gently until the batter is smooth.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto a parchment-lined baking sheet, leaving space between each cookie.
Baking
  1. Bake in the preheated oven for about 12-15 minutes, or until the edges begin to turn golden brown.
  2. Once out of the oven, sprinkle granulated sugar evenly over the tops and use a kitchen torch (or broiler) to caramelize the sugar until it forms a crispy top.
  3. Allow the cookies to cool fully, letting the caramelized sugar harden before serving.

Notes

To keep cookies fresh, store in an airtight container for up to 5 days, or freeze for up to 3 months. Reheat at 300°F (150°C) for 5-7 minutes.
