Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes with an electric mixer).
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter mixture, stirring until just combined.
- Fold in the heavy cream gently until the batter is smooth.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto a parchment-lined baking sheet, leaving space between each cookie.
Baking
- Bake in the preheated oven for about 12-15 minutes, or until the edges begin to turn golden brown.
- Once out of the oven, sprinkle granulated sugar evenly over the tops and use a kitchen torch (or broiler) to caramelize the sugar until it forms a crispy top.
- Allow the cookies to cool fully, letting the caramelized sugar harden before serving.
Notes
To keep cookies fresh, store in an airtight container for up to 5 days, or freeze for up to 3 months. Reheat at 300°F (150°C) for 5-7 minutes.
