  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream can be substituted with Greek yogurt for a lighter version
  • 1 cup chicken broth
  • 1 cup fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese for sprinkling on top
  • Salt and pepper to taste
  • Italian seasoning (optional)

Method
 

Preparation
  1. Start by seasoning the chicken breasts with salt, pepper, and Italian seasoning if using.
Cooking Chicken
  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-6 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
Making the Sauce
  1. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.
  2. Pour in the chicken broth, scraping up any bits stuck to the pan. Then, stir in the heavy cream and bring to a simmer.
  3. Add the fresh spinach and sun-dried tomatoes into the sauce, allowing them to wilt and soften for a couple of minutes.
Finishing the Dish
  1. Return the chicken to the skillet, nestling it in the creamy sauce. Sprinkle with Parmesan cheese, allowing it to melt and create a silky texture. Taste for seasoning, adding salt and pepper as desired.
Serving
  1. Dish up the Creamy Tuscan Chicken over rice, pasta, or alongside crusty bread to soak up the delicious sauce. Enjoy!

Notes

For a lighter version, use Greek yogurt instead of heavy cream. To avoid curdling, ensure medium-low heat when adding cream and do not let it boil vigorously.
