Preparation
- Start by seasoning the chicken breasts with salt, pepper, and Italian seasoning if using.
Cooking Chicken
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-6 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
Making the Sauce
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.
- Pour in the chicken broth, scraping up any bits stuck to the pan. Then, stir in the heavy cream and bring to a simmer.
- Add the fresh spinach and sun-dried tomatoes into the sauce, allowing them to wilt and soften for a couple of minutes.
Finishing the Dish
- Return the chicken to the skillet, nestling it in the creamy sauce. Sprinkle with Parmesan cheese, allowing it to melt and create a silky texture. Taste for seasoning, adding salt and pepper as desired.
Serving

Notes
For a lighter version, use Greek yogurt instead of heavy cream. To avoid curdling, ensure medium-low heat when adding cream and do not let it boil vigorously.
