Ingredients
  

Chicken and sauce
  • 2 pieces chicken breasts Select chicken breasts that are uniform in size for even cooking.
  • 1 cup heavy cream Can substitute with half-and-half for a healthier option.
  • 14.5 ounces can diced tomatoes Use diced tomatoes with juices.
  • 2 cloves garlic, minced Add garlic for flavor.
  • 1 tablespoon olive oil
  • to taste Salt and pepper Adjust seasoning to preference.
  • to taste Fresh basil For garnish.

Method
 

Preparation
  1. Season both sides of the chicken breasts with salt and pepper.
Cooking
  1. In a large pan over medium heat, add olive oil. Once hot, add the chicken breasts. Cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken and set it aside.
  2. In the same pan, add the minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the can of diced tomatoes (with juices) and stir to combine with the garlic. Let it simmer for 5 minutes.
  4. Lower the heat and stir in the heavy cream. Allow it to gently simmer for another 3-4 minutes; make sure it doesn't boil.
  5. Add the seared chicken back into the pan. Spoon the sauce over it, letting the chicken soak up all that creamy goodness. Cook for an additional 5 minutes to heat through.
  6. Top with freshly chopped basil before serving.

Notes

For toppings, consider adding freshly grated parmesan or crushed red pepper flakes for an extra kick. Avoid rushing the simmering process to enhance flavor.
