Ingredients
  

Main Ingredients
  • 1 lb ground beef or turkey Use Halal meat if desired.
  • 1 can black beans, rinsed and drained Rinse well to avoid can taste.
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 1 cup heavy cream or cream cheese
  • 1 cup chicken broth
  • to taste salt and pepper
Optional Toppings
  • as needed shredded cheese
  • as needed sour cream
  • as needed green onions
  • as needed tortilla chips

Method
 

Preparation
  1. In a large pot over medium heat, add the ground beef or turkey. Cook until browned, about 5 to 7 minutes, breaking it into smaller pieces.
  2. Once the meat is cooked through, add in the black beans, corn, diced tomatoes, and taco seasoning. Stir well to combine.
  3. Pour in the heavy cream or cream cheese and chicken broth. Stir until well combined and bring to a gentle simmer.
  4. Add salt and pepper as needed. Allow it to simmer for about 10-15 minutes, letting all the flavors meld.
  5. Ladle the soup into bowls and top with optional toppings like shredded cheese, sour cream, or crispy tortilla chips.

Notes

Keep leftovers in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat on the stove over low heat, adding a splash of chicken broth or water to thin as needed.
