  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can coconut milk
  • 2 cups vegetable broth
Spices and Seasoning
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • to taste salt and pepper

Method
 

Preparation
  1. In a large pot, heat a tablespoon of oil over medium heat.
  2. Add the chopped onion, and sauté until it becomes translucent (about 5 minutes).
  3. Add the minced garlic and grated ginger, and cook for another minute until fragrant.
Cooking
  1. Toss in the cubed sweet potatoes and rinsed red lentils. Stir well to combine with the aromatics.
  2. Pour in the coconut milk and vegetable broth, stirring to combine. Add the curry powder, cumin, salt, and pepper.
  3. Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the sweet potatoes are tender and the lentils are cooked through, stirring occasionally.
  4. If desired, use an immersion blender to slightly blend the curry for a creamier texture—feel free to make it as smooth as you like!
Serving

Notes

Substitutions: You can use yellow lentils instead of red lentils, and swap sweet potatoes for butternut squash for a different flavor profile. Make sure to rinse your lentils thoroughly to remove any dust or debris that might affect the taste.
