- Pour in the coconut milk and vegetable broth, stirring to combine. Add the curry powder, cumin, salt, and pepper.
- Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the sweet potatoes are tender and the lentils are cooked through, stirring occasionally.
- If desired, use an immersion blender to slightly blend the curry for a creamier texture—feel free to make it as smooth as you like!
