Pasta Ingredients
  • 8 oz Pasta (your choice)
Sauce Ingredients
  • 1 cup Sun-dried tomatoes (packed in oil, chopped)
  • 1 cup Coconut cream or cashew cream Can substitute with almond milk and cornstarch
  • 2-3 cloves Garlic (minced)
  • 1/4 cup Nutritional yeast
  • 2 cups Spinach (fresh or frozen)
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Pepper
  • Fresh basil (for garnish)

Method
 

Preparation
  1. Begin by boiling a pot of salted water. Once it’s bubbling, add your choice of pasta and cook according to the package instructions until al dente. Stir occasionally to prevent sticking.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to let it burn.
  3. Toss in the chopped sun-dried tomatoes and sauté for another minute, allowing their flavors to infuse the oil.
  4. Pour the coconut or cashew cream into the skillet. Stir until well combined and allow it to simmer gently.
  5. Stir in the nutritional yeast, fresh or frozen spinach, and season with salt and pepper. Let it cook for a few minutes until the spinach wilts and everything is warmed through.
  6. Once your pasta is cooked, drain and add it to the skillet. Toss everything together, ensuring every strand of pasta is coated in the creamy sauce.
  7. Serve hot and garnish with fresh basil. Enjoy your creamy pasta masterpiece!

Notes

If you have any leftovers, store in an airtight container in the refrigerator for up to 3 days, or freeze portions in freezer-safe containers for up to 2 months. Reheat in a skillet over low heat, adding a splash of water or vegetable broth for creaminess.
