Preparation
- Begin by boiling a pot of salted water. Once it’s bubbling, add your choice of pasta and cook according to the package instructions until al dente. Stir occasionally to prevent sticking.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to let it burn.
- Toss in the chopped sun-dried tomatoes and sauté for another minute, allowing their flavors to infuse the oil.
- Pour the coconut or cashew cream into the skillet. Stir until well combined and allow it to simmer gently.
- Stir in the nutritional yeast, fresh or frozen spinach, and season with salt and pepper. Let it cook for a few minutes until the spinach wilts and everything is warmed through.
- Once your pasta is cooked, drain and add it to the skillet. Toss everything together, ensuring every strand of pasta is coated in the creamy sauce.
- Serve hot and garnish with fresh basil. Enjoy your creamy pasta masterpiece!
Notes
If you have any leftovers, store in an airtight container in the refrigerator for up to 3 days, or freeze portions in freezer-safe containers for up to 2 months. Reheat in a skillet over low heat, adding a splash of water or vegetable broth for creaminess.
