Lasagna Ingredients
  • 9 pieces lasagna noodles Wide noodles preferred.
  • 2 tablespoons olive oil For sautéing vegetables.
  • 1 cup onion, chopped Adds flavor to the vegetables.
  • 3 cups mushrooms, sliced Earthy flavor, cooks down significantly.
  • 3 cups fresh spinach, chopped Can substitute with thawed frozen spinach.
  • 2 cups ricotta cheese Creamy base for layers.
  • 1 cup grated Parmesan cheese Divided for layering.
  • 2 cups mozzarella cheese, shredded For topping the lasagna.
  • 24 ounces marinara sauce Base layer for noodles.
  • 1 teaspoon garlic powder Flavor enhancer.
  • to taste Salt and pepper For seasoning.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large pot of salted boiling water, cook the lasagna noodles until al dente according to package instructions, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat, add the chopped onions, and sauté for about 3-4 minutes until translucent.
  4. Add sliced mushrooms to the skillet and cook for 6-8 minutes until they soften and brown. Then add chopped spinach and cook until wilted, about 2-3 minutes. Season with garlic powder, salt, and pepper.
  5. In a mixing bowl, combine ricotta cheese, half of the grated Parmesan cheese, and a pinch of salt and pepper. Mix until well-blended.
Assembly
  1. Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
  2. Layer three lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the sautéed vegetable mixture, and one-third of the mozzarella cheese.
  3. Repeat these layers, finishing with noodles, sauce, and the remaining mozzarella cheese and Parmesan on top.
Baking
  1. Cover the lasagna with aluminum foil and bake in the preheated oven for 25 minutes.
  2. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.
Serving
  1. Allow the lasagna to cool for about 10 minutes before slicing to make serving easier.

Notes

Use no-boil lasagna noodles for convenience, and consider adding a pinch of nutmeg to the cheese mixture for enhanced flavor. Store leftovers by cooling to room temperature, then tightly cover and refrigerate for up to 3-4 days or freeze for 3 months.
