Preparation
- Preheat your oven to 375°F (190°C).
- In a large pot of salted boiling water, cook the lasagna noodles until al dente according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat, add the chopped onions, and sauté for about 3-4 minutes until translucent.
- Add sliced mushrooms to the skillet and cook for 6-8 minutes until they soften and brown. Then add chopped spinach and cook until wilted, about 2-3 minutes. Season with garlic powder, salt, and pepper.
- In a mixing bowl, combine ricotta cheese, half of the grated Parmesan cheese, and a pinch of salt and pepper. Mix until well-blended.
Assembly
- Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
- Layer three lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the sautéed vegetable mixture, and one-third of the mozzarella cheese.
- Repeat these layers, finishing with noodles, sauce, and the remaining mozzarella cheese and Parmesan on top.
Baking
- Cover the lasagna with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.
Serving
- Allow the lasagna to cool for about 10 minutes before slicing to make serving easier.
Notes
Use no-boil lasagna noodles for convenience, and consider adding a pinch of nutmeg to the cheese mixture for enhanced flavor. Store leftovers by cooling to room temperature, then tightly cover and refrigerate for up to 3-4 days or freeze for 3 months.
