Preparation
  1. Begin by boiling a pot of salted water. Add your pasta of choice and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon, for about 5-7 minutes.
  3. Stir in the can of Rotel tomatoes with green chilies. Let it simmer for about 3-4 minutes to allow the flavors to meld.
  4. Reduce the heat to low and pour in the heavy cream. Stir until combined and let it simmer for another minute.
  5. Add the drained pasta to the skillet, then mix in the shredded cheese. Stir until everything is creamy and well-coated, allowing the cheese to melt fully.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnishing with optional toppings like chopped cilantro or sliced avocado for added flair!

Notes

To elevate the dish, consider using whole grain or gluten-free pasta. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat, adding a splash of cream or water to keep it creamy.
